Toast Aromatics

FRESH

Sweet cream‭, ‬vanilla and fresh-cut oak‭; ‬preserves freshness and fruit purity‭; ‬well-suited to delicate Chardonnay and Pinot Noir‭,‬‭ ‬also useful for brighter-fruited Merlot and Syrah where minimal oak imprint is desired‭.‬

LIGHT

Delicate vanilla‭, ‬pastry and light spice‭; ‬supports freshness‭, ‬fruit purity and fine length‭; ‬ideal for Chardonnay and Pinot Noir‭,‬‭ ‬adaptable to Merlot and Syrah‭, ‬and useful for earlier-drinking Cabernet needing gentle oak framing

MEDIUM

Vanilla‭, ‬caramel and nuts with good integration‭; ‬enhances complexity yet maintains fruit clarity and roundness‭; ‬particularly suited to Chardonnay‭, ‬Merlot and Syrah‭, ‬with applications for Cabernet and structured Pinot Noir styles‭.

MEDIUM +‬

Crème brûlée‭, ‬clove and toasted almond‭; ‬deep complexity‭, ‬strong integration and long finish‭; ‬well-matched to Merlot‭, ‬Syrah and Cabernet‭, ‬and powerful Chardonnay styles where significant oak presence is desired while retaining fruit focus‭.‬

HEAVY

Dark roast coffee‭, ‬mocha‭, ‬smoke and spice‭; ‬high complexity and pronounced structure with long length‭; ‬appropriate for robust Syrah‭, ‬Merlot and Cabernet styles‭, ‬and for richly textured‭, ‬oak-driven Chardonnay where strong barrel signature is advantageous‭.‬‬

Stave Supports

How you support the staves will be determined by your production processes and equipment‭.  ‬For example‭, ‬whether staves are added‭ ‬before or after fermentation‭, ‬whether the tank is open or closed‭, ‬the size of the tank and the like‭.  ‬However‭, ‬in all cases staves should be located no less than 1m above the base of the tank to clear lees‭. ‬Talk with us about this‭. ‬

Planning

You know your stylistic objectives for your wine‭.  ‬Talk with us about planning the use of alternatives for your wine‭.  ‬Variables‭ ‬include application timing‭, ‬rates and layout‭, ‬toast blending‭, ‬stave preparation and oxygenation‭.‬

Stave Storage

Store the product in its original packaging‭, ‬in a clean and dry place‭, ‬protected from light and any chemical products‭.  ‬Storage‭ ‬temperature between 5°C and 35°C‭.‬
